Diet is a major determinant of health and well-being. The UNH's research aims to develop nutritional strategies to prevent disorders associated with ageing and/or chronic diseases (sarcopenia, osteoporosis, metabolic syndrome, atherosclerosis). To meet this major societal challenge, the UNH is developing an approach that incorporates the notion of complexity, in terms of physiology, metabolism and nutrition. The aim is to determine the impact of dietary behaviour and the functionality of foods (or the nutrients of which they are composed) in different pathophysiological situations frequently associated with ageing and/or chronic diseases (inflammation, oxidative stress, metabolic stress, lipotoxicity, insulin resistance, vascular dysfunction, hormonal deregulation, etc.), so as to prevent the decline in the body's major functions and the targeted pathologies. The challenges are both to understand the mechanisms that lead to the onset of pathologies and to identify early biomarkers so that action can be taken at the first signs of metabolic dysregulation. Our current research is moving towards more tailored nutrition, taking into account the variability of individual responses to diet, and towards multimodal intervention approaches combining nutrition with physical activity and, if necessary, medical care. Lastly, tomorrow's nutrition will have to be based on more sustainable food production, which is why we are currently working on plants valuing as a source of proteins and bioactives with positive effects on health, particularly vascular and immune health.
